Blackeye Pea Salad

My mom shared this recipe with me a few weeks ago and tonite we tried it.
If I was not so tired I would have ate more of it.

Blackeye Pea Salad

2 cans (15.8 oz) Bush's blackeye peas, drained
3 Roma tomatoes, chopped
1 cup red onion, chopped
1 cup green bell pepper, chopped
1/2 cup green onions, chopped
1/2 cup cilantro, chopped
2 jalepenos, seeded & chopped (optional)
Salt & Pepper to taste

Dressing

1 (0.7 oz.) envelope Good Seasons Italian dressing mix
1/4 cup vinegar
3 tbls. water
1/2 cup olive oil
1/4 cup sour cream

Combine all ingredients in a jar with a lid, shake until completely mixed.
Pour over Blackeye Pea Salad.

I was unable to find the Bush's peas so I used a store brand.
I skipped the jalepenos because my wife has problems with hot foods.
This would work as a dip also :)

Spring Already?

Went for a little drive yesterday and visited with my mom. Her bulbs are already reaching for the sky.
Is it spring already?
Think I will head out to the river today after the laundry is started and find something to take pictures of.
I seem to have more time on my hands now, and it feels so good getting away from that hate ;)

Peace and Love are just letters arranged together
They have no meaning until we give them some
And so far we have not mastered their meaning
Someday far off in the future maybe mankind
Will finally understand their meaning

Monday Night May 11th 1846 / Domestic Peace by Anne Bronte

Monday Night May 11th 1846 / Domestic Peace by Anne Bronte

Why should such gloomy silence reign;

And why is all the house so drear,

When neither danger, sickness, pain,

Nor death, nor want have entered here?

We are as many as we were

That other night, when all were gay,

And full of hope, and free from care;

Yet, is there something gone away.

The moon without as pure and calm

Is shining as that night she shone;

but now, to us she brings no balm,

For something from our hearts is gone.

Something whose absence leaves a void,

A cheerless want in every heart.

Each feels the bliss of all destroyed

And mourns the change - but each apart.

The fire is burning in the grate

As redly as it used to burn,

But still the hearth is desolate

Till Mirth and Love with Peace return.

'Twas Peace that flowed from heart to heart

With looks and smiles that spoke of Heaven,

And gave us language to impart

The blissful thoughts itself had given.

Sweet child of Heaven, and joy of earth!

O, when will Man thy value learn?

We rudely drove thee from our hearth,

And vainly sigh for thy return.

Everyone wants it

Is it the impossible dream

An idea lost in our minds

Everyone talks about it

Some dream about it

Poets write sonnets about it

Philosopher’s try to teach the meaning of it

Musicians sing songs about it

Politicians promise to bring it to us

Some feel that fighting is the only way to achieve it

Why do we feel so strongly about it

What is this thing that we keep searching for

Does it have a taste

What does it feel like

If we find it will we be happy

If we are unable to find it within ourselves

How can we hope to share it with others

What holds so much Power over us

This magical thing we label as Peace!

Going Home

Your Earthly journey has came to an end
Your body,
The vessel for your soul grew tired and expired
Your spirit could not be dampened
You were always carefree and happy
Your Love for life and people was infectious
You must have been busy talking to others on your way
It was late this afternoon before I heard Grandma
Calling you Home to be with your brothers and sisters
Now your next Journey can begin

Save me a seat at the dinner table between you and dad,
As soon as my journey is done here I will join you!
